Instructions

  1. Cook the vegetables: Heat the olive oil in a large pot over medium-high heat. Add the diced onion, carrot, and celery. Cook, stirring frequently, for 4 to 5 minutes until the vegetables begin to soften.
  2. Add the aromatics: Stir in the minced garlic, dried oregano, dried basil, and salt. Cook for an additional minute to release the flavors.
  3. Add the cabbage: Incorporate the chopped cabbage into the pot. Stir well and allow the cabbage to sweat for about 5 minutes, stirring frequently so it softens evenly.
  4. Let it simmer: Pour in the vegetable broth and diced tomatoes with their juices. Bring the soup to a simmer, uncovered, and cook for 10 minutes or until all vegetables are tender to your preference.
  5. Finish and serve: Remove the pot from the heat. Stir in the lemon juice, fresh parsley, and season to taste with cracked black pepper. Give everything a final stir and serve warm.
