  • 1 yellow onion, diced
  • 1 pound ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1 ½ cups chicken broth, divided
  • 1 can black beans, drained & rinsed (15 ounces)
  • 1 can corn, drained (15 ounces)
  • 1 jar medium salsa (16 ounces)
  • 1 cup brown rice or jasmine rice

Instructions

  1. Heat the oil and brown beef. Press the “Saute” button on your pressure cooker and add 2 tablespoons of olive oil. Once hot, add 1 pound of ground beef and cook until browned, stirring occasionally. Drain any excess fat to keep the dish lighter.
  2. Sauté the onions. Add 1 diced yellow onion to the beef and cook for 1 to 2 minutes until the onions soften and become translucent, stirring frequently to mix flavors.
  3. Add seasoning and broth. Stir in 1 packet of taco seasoning and 1 cup of chicken broth. Mix well and simmer for 1 minute to allow the seasoning to blend.
  4. Incorporate beans, corn, and salsa. Add 1 can of drained and rinsed black beans, 1 can of drained corn, and 16 ounces of medium salsa to the pot. Stir gently until the ingredients are combined evenly.
  5. Add rice without stirring. Spread 1 cup of brown or jasmine rice over the mixture in an even layer, but do not stir it in. This prevents the rice from sticking to the bottom during cooking.
  6. Pour remaining broth over rice. Carefully add the remaining ½ cup of chicken broth over the top of the rice layer to ensure it cooks evenly.
  7. Pressure cook the mixture. Cover the pot with the lid, making sure the valve is set to “Sealing.” Select the “Pressure Cook” or “Manual” function on high pressure and set a timer for 15 minutes. The cooker will take about 10 to 12 minutes to build pressure before starting the countdown.
  8. Release pressure and combine. Once the cooking time finishes, perform a quick release by carefully turning the valve to “Venting.” Remove the lid and stir the contents thoroughly to combine the rice with the other ingredients.
  9. Serve with toppings. Plate the burrito bowls and garnish with shredded cheese, diced tomatoes, sliced avocado, tortilla chips, and sour cream as desired. Enjoy your flavorful, hearty meal!
