  • 1/2 cup buffalo sauce
  • 8 oz cream cheese, room temperature
  • 2 cups shredded cheddar cheese, divided

Garnish

  • 1/4 cup buffalo sauce
  • Chopped parsley (or chopped green onions as substitute)

Instructions

  1. Prepare dish and preheat oven: Spray a 9×13” casserole dish with oil and preheat your oven to 375°F (190°C).
  2. Combine main ingredients: In a large bowl, add shredded chicken and raw riced cauliflower.
  3. Mix together: Stir chicken and cauliflower well to combine evenly.
  4. Add buffalo sauce and cream cheese: Incorporate 1/2 cup buffalo sauce and softened cream cheese to the mixture.
  5. Mix thoroughly: Combine all ingredients until fully blended for an even flavor.
  6. Add cheddar cheese: Stir in 1 cup of shredded cheddar cheese to the mixture.
  7. Stir into a thick mix: Mix thoroughly until the mixture thickens considerably.
  8. Transfer to casserole dish: Spread the mixture evenly in the prepared casserole dish using a spatula.
  9. Top with cheese: Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
  10. Bake covered: Cover the dish with foil and bake in the preheated oven for 25 minutes.
  11. Uncover and finish baking: Remove the foil and bake an additional 10 minutes until the cheese is melted and bubbling.
  12. Garnish and serve: Remove casserole from oven, drizzle with extra buffalo sauce and sprinkle chopped parsley before serving hot.

Notes

  • For a quicker option, use store-bought rotisserie chicken.
  • Feel free to swap cauliflower rice with broccoli rice or a mix for variation.
  • You can substitute cream cheese with full-fat Greek yogurt or sour cream for added protein or different flavor.
  • Other cheese options like mozzarella, Monterey Jack, or pepper jack work well instead of cheddar.
  • Chopped green onions make a great garnish alternative to parsley.
  • Make sure cream cheese is at room temperature for easy mixing.
  • Covering the casserole during the first part of baking helps retain moisture.
