Instructions

  1. Make the blueberry compote: In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until the blueberries soften and the mixture becomes syrupy.
  2. Thicken the compote (optional): If you want a thicker consistency, dissolve 1 tsp cornstarch in 1 tbsp water and stir it into the blueberry mixture. Continue cooking briefly until it thickens, then remove from heat and allow to cool completely.
  3. Prepare the yogurt base: In a bowl, mix the Greek yogurt with vanilla extract until smooth. Taste and add more honey or maple syrup if you prefer it sweeter.
  4. Fill the molds: Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full.
