Blueberry Filling:

  • 4 cups fresh blueberries, divided
  • 1/4 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch

Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons buttermilk
  • 1/2 teaspoon vanilla extract

Additional:

  • Maple syrup
  • Whipped cream
  • Fresh mint leaves

Instructions

  1. Prepare the Blueberry Filling: In a medium saucepan, combine 3 cups of blueberries, sugar, and lemon juice. Cook until simmering. Whisk cornstarch with water, add to mixture, and cook until thickened. Stir in remaining blueberries.
  2. Make the Pancake Batter: Whisk dry ingredients in a bowl. In another bowl, whisk eggs, buttermilk, butter, and vanilla. Combine wet and dry ingredients.
  3. Assemble the Casserole: Grease baking dish. Pour half the batter, add blueberry filling, top with remaining batter.
  4. Bake: Bake at 375°F for 30-35 minutes until golden brown.
  5. Prepare the Glaze (Optional): Whisk powdered sugar, buttermilk, and vanilla until smooth.
  6. Serve: Let cool, drizzle with glaze, and serve warm with maple syrup, whipped cream, and mint leaves.
