Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

Cheesecake Filling

  • 16 oz (450 g) cream cheese, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup sour cream, room temperature

Peach Cobbler Topping

  • 1½ cups fresh peaches, peeled & sliced
  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 6 Tbsp cold unsalted butter, cut into small pieces

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Make the crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.
  3. Prepare cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream. Pour over crust.
  4. Prepare peach cobbler topping: Combine peaches, flour, sugar, cinnamon, and nutmeg. Spread over filling and dot with butter.
  5. Bake: Bake for 45-50 minutes until set. Cool before cutting into bars.
