Dry Ingredients:
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
Wet Ingredients:
- 2 sticks unsalted butter, room temperature
- 2 cups sugar
- 2 tsp pure vanilla extract
- 1 tsp cinnamon powder
- Pinch of nutmeg
- 2 large eggs, room temperature
- 1½ – 1¾ cups mashed ripe bananas (about 4 large bananas)
- 1 cup sour cream or plain yogurt
- Preheat and Prepare: Preheat oven to 350°F. Butter a 9-10 inch Bundt pan generously.
- Mix Dry Ingredients: Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream Butter and Sugar: Beat butter until creamy. Add sugar and beat until pale and fluffy. Mix in vanilla, then add eggs one at a time.
- Add Bananas and Dry Ingredients: Mix in mashed bananas, followed by half of the dry ingredients, sour cream, and the rest of the flour mixture.
- Bake: Pour batter into pan, bake for 60-75 minutes until a knife comes out clean. Cool for 10 minutes, then unmold onto a rack to cool completely.
Notes
- You can substitute half of the all-purpose flour with whole wheat flour for a nuttier flavor.
- For a healthier option, use coconut palm sugar instead of regular sugar.
- The cake tastes even better the next day if allowed to sit overnight.
