For the Oatmeal Bars:

  • 2 cups rolled oats
  • 1 1/3 cup mashed banana (for banana-free, try these Baked Oats)
  • 6 tbsp water
  • 1/2 tsp salt
  • 3 tbsp pure maple syrup, agave, or honey OR stevia equivalent
  • 3 tbsp oil, nut butter, or additional water
  • 1 tsp pure vanilla extract
  • optional handful chocolate chips, chopped nuts, etc.

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F. Line an 8-inch pan with parchment paper or grease it well.
  2. Prepare the Oatmeal Mixture: In a mixing bowl, combine rolled oats, mashed banana, water, salt, sweetener of choice, oil or nut butter, and vanilla extract. Mix well.
  3. Bake: Transfer the mixture into the prepared pan, smooth it out, and sprinkle with optional chocolate chips or nuts. Bake for 20 minutes.
  4. Finish Baking: After 20 minutes, turn off the oven without opening the door and let the bars sit in the closed oven for an additional 5 minutes.
  5. Slice and Store: Remove from the oven, slice into bars, and enjoy! Store any leftovers in the refrigerator for 3-4 days or freeze for longer preservation.
