These Apple Cheesecake Breakfast Quesadillas are a delightful twist on a classic dish, combining the creamy richness of cheesecake with the sweetness of apples in a crispy tortilla. Perfect for a special breakfast or brunch treat!

Tortillas:

  • 4 large burrito sized flour tortillas

Cheesecake Mixture:

  • 8 oz cream cheese, softened
  • 2 tbsp Imperial granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Apples:

  • 2 medium apples, thinly sliced

Additional:

  • 4 tbsp butter
  • melted butter
  • mixture of cinnamon & sugar

Instructions

  1. Cheesecake Mixture: In the bowl of a stand mixer, add the cream cheese, sugar, vanilla, & cinnamon. Whip together until smooth and completely incorporated.
  2. Assembly: Spread 1/4 of the mixture evenly out over one side of a tortilla. Layer apples over one 1/2 of the tortilla. Fold over to close.
  3. Cooking: Melt 1 tbsp of butter in a flat bottomed skillet over medium low heat. When melted, transfer the quesadilla to the pan. Cook 1-2 minutes, or until golden brown.
  4. Flip and Repeat: Using two spatulas, flip the quesadilla, cooking another 1-2 minutes, until that side’s also golden brown. Repeat for the remaining 3 quesadillas.
  5. Finishing Touches: Using a basting brush, lightly brush one side of a cooked, crisp quesadilla with melted butter, sprinkle liberally with cinnamon sugar. Flip the quesadilla, repeat, and do for all of the remaining quesadillas.
  6. Serve: Using a pizza cutter, cut the warm quesadillas into wedges and serve immediately.

Notes

  • This recipe works best with crisp and slightly tart apples like Granny Smith.
  • Feel free to adjust the amount of cinnamon sugar to suit your taste preferences.
