Instructions

  1. Prepare the gammon: Remove the gammon joint from the fridge and take off all packaging and string about 30 minutes before cooking to allow it to come to room temperature.
  2. Make the glaze: In a bowl, mix together the Dijon mustard, wholegrain mustard, honey, and dark brown sugar until well combined to create a smooth glaze.
  3. Score the fat: Using a sharp knife, carefully remove the skin from the gammon joint, leaving a thin layer of fat. Score this fat in a diamond pattern to help it crisp during cooking.
  4. Prepare for air frying: Place a large piece of foil inside the air fryer basket. Put the gammon joint in the center and pour the glaze over it. Turn the joint to ensure it is fully coated in the glaze.
  5. Wrap and cook: Seal the foil around the gammon to create a tight parcel. Air fry at 180°C (356°F) for 50 minutes. Halfway through, open the parcel, turn the gammon over to ensure even cooking, then re-wrap and continue cooking.
  6. Crisp the fat: After 50 minutes, remove the foil and air fry the gammon uncovered for an additional 10 minutes to crisp up the scored fat. The gammon is ready when the internal temperature reaches at least 70°C (160°F).
  7. Rest and serve: Remove the gammon from the air fryer and let it rest for 10-15 minutes before carving. Optionally, skim excess fat from the glaze and use it as a delicious sauce.
