  • 1 cup (240 ml) heavy cream
  • 2 tablespoons unsalted butter

  1. Prepare a pan: Line an 8×8-inch (20×20 cm) square baking dish with parchment paper, leaving some overhang for easy removal.
  2. Cook the fudge mixture: In a medium-sized heavy-bottomed saucepan, combine the maple syrup and heavy cream. Bring the mixture to a boil over medium heat, stirring occasionally to prevent scorching.
  3. Attach a candy thermometer to the saucepan and continue to cook, without stirring, until the mixture reaches 235°F (112°C), the “soft-ball” stage.
  4. Add butter and cool: Remove the saucepan from the heat and stir in the butter until melted. Let the mixture cool to about 110°F (43°C).
  5. Beat the fudge: Once cooled, beat the mixture vigorously with a wooden spoon until it thickens and loses its glossy appearance. This may take about 5-8 minutes.
  6. Set the fudge: Quickly pour the mixture into the prepared pan and spread it evenly. Let it set at room temperature for about 2 hours or until firm.
  7. Cut and serve: Once firm, lift the fudge out of the pan using the parchment paper. Cut into small squares and serve.
